Organic Grapes

All of our wines start with organic grapes. Avaline Sparkling Rosé is a combination of Macabeo, Xarel-lo, Parellada and Monastrell grapes.

Organic Cane Sugar

In the making of sparkling wine, it’s common to add a dosage which is a mixture of wine, sugar and yeast. This kicks off secondary fermentation and gives the wine the perfect bubble. We of course use organic cane sugar. Just enough to get the job done.


Sulfites

A natural by-product of fermentation, sulfites stabilize wine. While wine can legally have up to 350ppm of sulfites, we add just enough to ensure it consistently tastes great, always keeping the total amount to under 100ppm.

Bentonite Clay

This naturally-occurring, ultra-fine clay binds to proteins in the wine, then is carefully filtered out to help maintain clarity.

The Grapes

Macabeo

This grape adds light floral and fruit notes, giving the wine its aromatics (and yummy smell). 

Xarel-lo

The acidity in this Xarel-lo makes the wine crisp and lip smacking while also giving it a touch of roundness, resulting in a nice smooth sip. 

Parellada 

This varietal adds a finesse to the wine, lending a hint of citrus and crisp pear.  

Monastrell 

Monastrell adds the beautiful peachy color, along with bright red fruits.

Meet the Winemaker

Raventós i Blanc, located in Penedès, Spain, is one of the oldest wineries in the world and has been in the Raventos family since 1497. Pepe Raventós now carries on the longstanding tradition of producing beautiful sparkling wines from organically-farmed grapes. The family is committed to the natural and historic heritage of their estate, going to great lengths to promote biological diversity and improve sustainability.

The difference between wine and grape juice, yeast kicks off the fermentation process. Our yeast is either indigenous to the grapes or certified for use in organic production. Present in our white and rosé.

Yeast Nutrient
A naturally-occurring product, our yeast nutrients assist with fermentation. Present in our rosé.
