All of our wines start with organic grapes. Avaline Rosé is a combination of Grenache, Cinsault, Caladoc, Syrah and Cabernet grapes, certified organic by CCOF.
A natural by-product of fermentation, sulfites stabilize wine. While wine can legally have up to 350ppm of sulfites, we add just enough to ensure it consistently tastes great, always keeping the total amount to under 100ppm.
The difference between wine and grape juice, yeast kicks off the fermentation process. Our yeast is either indigenous to the grapes or certifed for use in organic production.
Tartaric acid is a natural and primary acid in grapes and wine. It’s a critical part that lends a fresh, bright character to wine. From the fruit to the finished wine, tartaric acid levels will decline throughout the wine making process, but having the proper level will result in a balanced and delicious wine.
Pectic enzymes are proteins used to clear up wine by breaking down pectins to prevent a “pectin haze.” Pectic enzymes also help color and juice extraction when pressing the grapes.
A naturally-occurring product, our yeast nutrients assist with fermentation.

A staple of Provence, the Grenache grape adds vibrance to our blend through its expression of stone fruit and tropical fruit flavors.
A low sugar grape, Cinsault helps keep our alcohol low while adding a peachy cantaloupe color and tart cherry to the finish to the blend.
This grape is to thank for our rosé's appealing color and delicately expressive mouthfeel, where spices mingle with nectarine blossoms.
Sweet and spicy, Syrah helps round out the other grapes and brings a light peppery finish.
Cabernet brings complexity to our blend, adding spice, red currants, and grapefruit flavors.
Meet the Winemaker
The Negrel Family is one of the oldest wine making families in the Provence region. Mas de Cadenet is now run by sister and brother, Maud and Matthieu, who continue the 200+ year family tradition of caring for their property and making delicious wine. The family believes that organic farming is the best way to respect the land for generations to come.
