All of our wines start with organic grapes. Avaline Sparkling is a combination of Macabeo, Xarel-lo and Parellada grapes.
Organic Cane Sugar
In the making of sparkling wine, it’s common to add a dosage which is a mixture of wine, sugar and yeast. This kicks off secondary fermentation and gives the wine the perfect bubble. We of course use organic cane sugar. Just enough to get the job done.
A natural by-product of fermentation, sulfites stabilize wine. While wine can legally have up to 350ppm of sulfites, we add just enough to ensure it consistently tastes great, always keeping the total amount to under 100ppm.
This naturally-occurring, ultra-fine clay binds to proteins in the wine, then is carefully filtered out to help maintain clarity.

This grape adds light floral and fruit notes, giving the wine its aromatics (and yummy smell).
The acidity in this Xarel-lo makes the wine crisp and lip smacking while also giving it a touch of roundness, resulting in a nice smooth sip.
This varietal adds a finesse to the wine, lending a hint of citrus and crisp pear.
