Marmalade & Lavender Spritz

Marmalade reminds us of childhood toasts, so it feels somewhat fitting to be toasting with it in a new way. This simple spritz calls for a large spoon of marmalade, but if that’s not the jam for you, sub in your favorite.

Directions:

For the lavender simple syrup:

In a small saucepan, bring the water to a boil. Pour in the brown sugar or honey and stir until completely dissolved. Add the whole lavender sprigs and keep at a boil for a minute or so. Remove from heat and allow the lavender to infuse for at least thirty minutes. The longer you steep and the more sprigs you add, the stronger the lavender flavor will be. Strain and refrigerate the simple syrup in an airtight glass container.

For the spritz:

Scoop a big spoonful of jam into your glass, then add sparkling water and stir quickly. Top off with the white wine and finish with a sprig of fresh lavender. To sweeten the spritz, you can make a lavender simple syrup and add to taste. If you don’t have lavender sprigs, fill an ice tray with dried lavender flowers and water. The lavender cubes make for a pretty drink as long as you don’t mind the odd flower when they melt. 

Marmalade & Lavender Spritz

For the lavender simple syrup:

  • 4+ sprigs of lavender
  • 1 cup of brown sugar or honey 
  • 1 cup of water 

For the spritz:

  • 1 tbsp marmalade jam
  • 1 tbsp lavender simple syrup, optional    
  • 1 part sparkling water 
  • a splash of Avaline white
  • a sprig of lavender garnish
