A natural by-product of fermentation, sulfites stabilize wine. While wine can legally have up to 350ppm of sulfites, we add just enough to ensure it consistently tastes great, always keeping the total amount to under 100ppm.
This naturally-occurring, ultra-fine clay binds to proteins in the wine, then is carefully filtered out to help maintain clarity.

Cream of Tartar
A byproduct of winemaking, we add a bit to accelerate our cold-stabilization, a process that keeps crystals from forming in the wine.
Tartaric acid is a natural and primary acid in grapes and wine. It’s a critical part that lends a fresh, bright character to wine. From the fruit to the finished wine, tartaric acid levels will decline throughout the wine making process, but having the proper level will result in a balanced and delicious wine.
Pectic enzymes are proteins used to clear up wine by breaking down pectins to prevent a “pectin haze.” Pectic enzymes also help color and juice extraction when pressing the grapes.
The difference between wine and grape juice, yeast kicks off the fermentation process. Our yeast is either indigenous to the grapes or certified for use in organic production.
A naturally-occurring product, our yeast nutrients assist with fermentation.

Five grapes come together to make, dare we say, a perfect rosé? Grenache and Cinsault bring flavors of stone fruit and bright citrus, while Syrah and Caladoc have an appealing color and delicate mouthfeel. Cabernet rounds out the wine with notes of tart red fruits and a clean, refreshing finish that makes this perfect day to night.
Avaline Red is a beautiful blend of two aromatic and fruitful grapes: Grenache & Syrah. The Grenache is smooth and adds black cherry aromas with a hint of cinnamon, while the Syrah brings boldness along with notes of plum, (fresh cracked) peppercorn, and fresh blackberry.
